Meals:
Do you have one paycheck a month that is squeaky tight? Or all of them? The one that especially gets us is around the end of the month, when our mortgage comes out. The payment isn’t bad, but when you add in daycare for two kids, gas and groceries, there’s not much left over, especially when you factor in unemployment.
On top of all of that this week, my teenager is turning 18! While I’m excited about this, it’s a bit of a stretch and a challenge but we’ll still find ways to have fun. I’m planning on taking the day off and spending it with him. He’s asked to go to his favorite Chinese buffet for lunch, which is doable when it’s just the two of us. We might hit a movie or go hiking. Depends on our crazy weather.
In our family, the birthday person gets to plan the meals of the day, so he’s asked for breakfast burritos and burgers and fries. That’s actually pretty internationally versatile considering the Chinese lunch. I think I did ok by that kid! 🙂
Recipes:
Korean eggs- It’s bibimbap, simplified. We throw together rice, kimchi and leftover veggies, top with fried eggs and Korean ketchup (Gojuchang)
BBQ Chicken- toss a bottle of BBQ sauce over a whole cut up chicken and bake at 350 for 1 hour.

Deals:$71.27
I managed to find a few deals. Milk was on sale at Kroger for $1.99 a gallon and Aldi decided to cut their price to $1.69. Hooray! Lots of milk for us. I also found bread on clearance as well as heirloom tomatoes and herbs for the garden.
Right now, the best deals are the ones growing on our land. We spent the weekend grazing on fresh raspberries, black raspberries, and mulberries. The everbearing strawberries are recovering from their move and should start producing again soon. The blackberries are blooming and we should have our very first crop in a couple of weeks, as well as elderberries. I even managed to get a few red gooseberries this year, which were pretty good.
Most of my fruit bushes were bought on clearance, and some were free. They literally popped up out of nowhere (mulberries, elderberries and black raspberries all volunteered for the job!) I have planted many more that aren’t ready this year, but someday soon!
