I love green smoothies, and this one is really special. I’ve always loved those Watergate salads you see at picnics and potlucks. Those fluffy, mint-colored pistachio pudding salads were full of wonderfully bad things for you. I wanted to make a healthier smoothie version, and came up with a green smoothie that’s actually good for you!
I like smoothies that you can eat for breakfast and dessert. And this one? I could eat it all day long! You would never guess there’s spinach in it! The whipped topping is optional, but it really makes it decadent! Have it for breakfast, dessert, snacktime, whenever. Just have it!
